Tis the season to bake.
Fa la la la la....
Okay, I am getting ahead of myself.
But seriously, if you like eggnog, you will love this simple recipe for eggnog pound cake.
It's so simple, 5 ingredients folks!
~here we go~
1 {16 oz.} package pound cake mix
1 1/4 cups eggnog
2 large eggs
1/2 t. nutmeg
1/2 t. vanilla extract.
Preheat oven to 350. Beat all ingredients at low speed with an electric mixer until blended. Increase speed to medium, and beat 2 minutes. Pour into a lightly greased 9 x 5 inch loaf pan
{I used a bundt cake pan. You can also make cupcakes with this recipe}
Bake for one hour. Mine got done a little sooner, like 45 minutes, so be sure to check on it.
Serve with a glass of eggnog for a perfectly delightful fall treat!

2 1/4 teaspoons (1 envelope) active dry yeast
3/4 cup pumpkin puree
1/4 cup white sugar
1 tsp salt
2 1/2 cups bread flour
1 cup granulated sugar
2 tsp ground cinnamon
1/2 tsp fresh ground nutmeg
2 Tbsp unsalted butter
Buttered Rum Glaze
2 Tbsp unsalted butter
1/8 cup brown sugar
1 1/2 Tbsp milk
3/4 cup powdered sugar
1 Tbsp rum

3/4 cup powdered sugar

Directions
In a saucepan over medium-high heat, brown 2 tablespoons of butter, letting it bubble up and turn a dark golden brown but being careful not to allow it burn (turn black). Once browned, remove the pan from the heat and carefully add the milk, return to stove and heat through. Pour the milk and butter into the bowl of standing mixer (fitted with a dough hook) and allow to cool so it is no longer hot but also not cool (about 100-110 degrees F). Once it has reached a warm but not hot temperature add the yeast and 1/4 cup of sugar and allow to proof. Then add the the pumpkin, salt, and 1 cup of flour. Stir until combined then add the rest of the flour 1/2 cup at a time and knead for 6 minutes, until the dough is smooth and elastic and just slightly sticky. If the dough is too moist, add extra flour 1 tablespoon at a time.
Move dough to a lightly oiled bowl and cover with a clean towel. Allow to rise in a warm place for 60-90 minutes or until doubled in size.
While dough is rising, brown another 2 tablespoons of butter. Add the sugar, cinnamon, and nutmeg and mix well.** Making sure sugar evenly absorbs the butter. Set aside. Next, grease and flour a 9x5 loaf pan and set aside.
When the dough has doubled in size, punch it down and flip out onto a clean floured surface and knead with hands for 1-2 minutes. Roll dough into a 20x12 inch rectangle.*** Evenly sprinkle the dough with the cinnamon sugar mixture and press into dough with palms of the hand. Cut the rectangle into 6 strips. Lay strips on top of each other and cut each strip into 6 even squares (cut in half then each half into thirds). Stack strips vertically into the loaf pan. Cover the pan with a clean towel and let rise for 30-45 minutes.
In the meantime preheat an oven to 350 degrees. After rising in the pan bake for 30-40 minutes (mine took 37 exactly) or until top is a very deep golden brown.

It's no secret that I love to bake.
I also happen to love pumpkin.
I thought I'd share a couple recipes with you that I made this past week, and they turned out fantastic!
I am a huge fan of Starbucks pumpkin scones.
I happen to think the other day that I bet I could find a recipe for them online.
So, I googled it and sure enough, a ton of recipes popped up.
I will say, they turned out almost identical to the Starbucks ones!

Chocolate Peanut Butter Surprise Cookies
Sweet Pea's Kitchen
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar (plus more for rolling)
1/2 cup packed brown sugar
1/2 cup unsalted butter, softened
1 cup creamy peanut butter, divided
1 teaspoon vanilla extract
1 egg
3/4 cup powdered sugar
1. Preheat oven to 375ยบ F. Line a baking sheet with parchment paper; set aside.
2. In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
3. In the bowl of a stand mixer fitted with the paddle attachment, beat together sugars, butter and 1/4 cup of peanut butter until light and fluffy. Add the vanilla and egg, beating to combine. Stir in the flour mixture and stir to combine, blending well. Set aside.
4. In a medium bowl, mix together powdered sugar and remaining 3/4 cup of peanut butter until smooth.
5. Pull off a heaping tablespoon of cookie dough and flatten with your hands. Take about 1 teaspoon of peanut butter mixture and place it in the center of the chocolate dough. Wrap the chocolate dough around the peanut butter center, pressing to seal. Roll the cookie into a ball and roll the cookie in the sugar. Place cookies on the prepared baking sheet 2 inches apart. Using the bottom of a glass, flatten each cookie to about a 1/2 inch thickness.
6. Bake in preheated oven for 7 to 9 minutes. Let stand on the baking sheet for 2 minutes, then remove to a wire rack.

Yesterday I added a stack of ironstone plates that I once had for sale at Ruffles and Rust Square.
When I started dreaming about them at night I knew it was time to go in and reclaim them.
It's a secret love affair I have with ironstone.
I also raided my parents peony garden yesterday.
Thanks Mom and Dad, you grow much lovelier peonies than I ever could.
I filled a white bowl with fruit, and added a new/old oil painting I got recently.
I LOVE the pink and the turquoise together~one of my favorite color combinations.

We celebrated my darling little niece Lyla's birthday on Saturday, she turned 2.
I made Meg's rainbow cake.
It was very easy and so pretty when you cut into it!
And most importantly, the birthday girl loved it!

We have this fabulous little bistro near us that serves the most delicious food.
It's quaint, it's delicious, and I love meeting friends there.
One wall in the restaurant is a big window so you can watch the pastry chefs preparing pie crusts, rolls, and desserts. Lisa Dupar is the owner of this restaurant and has this fabulous cookbook with recipes from the bistro. While I don't own the cookbook yet, my friend Lissa was kind enough to share a recipe for the soup I get every single time I go there.

I will say, I am not a huge tomato soup fan.
But I could seriously eat their tomato soup daily, along with their fabulous house salad.
So, although I haven't made it yet, I thought I'd share the recipe with you.
It looks fairly simple to make, not many ingredients and it looks like it will serve a crowd.

Ok, without further adieu, here is the recipe for Pomegranate's tomato soup.

pom tomato soupbouquet garnish:6 thyme sprigs1 rosemary sprig
to make the garnish:
Ingredients:tie the thyme and rosemary sprigs together with a piece of kitchen string.
Enjoy!4 oz butter3 med size fennel bulbs chopped1 c chopped yellow onions1/2 c chopped shallots2 T chop garlic3 1/2 lbs canned Italian plum tomatoes, with juice, chopped1 1/2 quarts chicken stock1 c heavy creamsalt and pepperfennel greens for garnishIn a large saucepan over med. heat, melt the butter. Add the fennel, onion, shallots, and garlic. Saute until tender. Add the tomatoes and cook for 5 minutes. Add the bouquet garnish and chicken stock. Bring to a boil. Reduce heat and simmer 15 to 20 minutes. Add the cream and bring to a simmer, then remove from heat and let cool. Discard the bouquet garnish. Blend the soup in a blender or with an immersion blender until smooth, then pass blended soup through a fine strainer. Season to taste with salt and pepper.

Yesterday I was at one of my favorite stores~the dollar tree, when I came across this fabulous contact paper. While I was lining my kitchen drawers the thought came to me.....

Today is my husbands birthday.
We have plans tonight so we celebrated last night with family and friends who all came over for dinner.
I thought I'd share the menu as it was a tasty one!
We started the pork on the traeger at 6 am and smoked it for 12 hours.
The avocado fries were delicious.

The coleslaw recipe was from here.
I also served green grapes in keeping with the "green" theme,
as well as veggie appetizers such as cucumber
and zucchini slices, green peppers, celery, etc.
All green of course!
Key lime pie and devonshire pudding.
I cheated and bought the pie, but I did make the devonshire pudding.
It was my sister in law Debbie's recipe.
For the kids:
Lime jello and shamrock cookies.
Today I am off to go junking with a couple friends.
It should be a good day!
